Game Day Pasta Salad

In search for the perfect Super Bowl menu, I decided to add pasta salad to the mix and it was a huge success! This is an easy, fresh side that you can have along with all other game day treats. I love serving this because it has some zing to it, making it the perfect bite after indulging in the other rich foods served at sporting events. This was a staple in my house growing up. There wasn’t a game day, beach day, or special occasion without this pasta salad. I’ve never had a friend or family member who didn’t love this classic recipe. The best part is that it is extremely easy and everything can be prepared in advance! I love this dish and I know you will enjoy it too!

You will need:

  • 1 box Rotini pasta (or any pasta of your choice)
  • 1 peeled and diced cucumber
  • 1 cup halved cherry tomatoes
  • 7 oz package chopped pepperoni
  • 1 cup cubed mozzarella (low-moisture)
  • Italian dressing to taste (I recommend dressings that are labeled “robust” because they tend to have more seasoning and flavor)
  • Parmesan cheese (optional)

Directions:

  1. Cook pasta of choice and allow to cool for 30-45 minutes
  2. Add remaining ingredients to the pasta and allow it to chill further
  3. Serve cold topped with parmesan cheese
  4. Enjoy!
