I find it so hard to cook for one person. I always end up with a ton of unused ingredients that usually end up going to waste. Nothing hurts my soul more than throwing away food. I love making things from scratch but, sometimes you have to let the grocery store do some of the work for you (especially when you are cooking for one). I especially find it hard to make asian dishes because they require a lot of ingredients. But I absolutely love asian style dishes with soy sauce, ginger, sesame, etc. Most grocery stores carry salad kits where they give you all the ingredients you need to create an artisanal salad. They come with little bags of salad toppings and dressing. I thought it would be a great idea to upgrade one of these salad kits into a bomb meal. Add extra ingredients from your fridge to bring the store bought salad to life. I added edamame, red cabbage and some extra green onion. I also spruced up the dressing by adding some tamari (basically low sodium soy sauce) and some rice wine vinegar. I topped it all off with a tamari pan seared salmon and it was the perfect healthy meal!
You will need:
1 bag of asian lettuce mix
1 salmon filet
1 cup peeled edamame
1 cup red cabbage
Few tablespoons tamari (or soy sauce)
Few tablespoons rice wine vinegar (or any vinegar of your choice)
Pour your lettuce mix into a bowl and add edamame, shredded red cabbage, green onion and whatever extra ingredients you have on hand. In a bowl to the side, pour the dressing that comes with the salad kit into a bowl and add a few tablespoons of tamari and rice wine vinegar. Dress and toss your salad and set aside. Season your salmon with salt and pepper and pan fry in olive oil. When salmon is about halfway done add a few tablespoons of tamari. Place your salmon on your salad and enjoy!
