Let’s talk brunch.
Brunch is a huge trend right now and I completely understand why. It is the perfect weekend activity. You get to sleep in as late as you want and still get served a large stack of pancakes at 2pm. I personally can’t think of a better way to spend a day off. However, while brunch is great, so are pajamas. And when you make brunch at home, you can have both!
This is one of those recipes that looks a lot harder to make than it actually is. Essentially, it’s tomatoes and onions topped with over easy eggs served with some crusty bread. This is so simple, but it looks like you’re at a fancy brunch in the city. The key to this recipe is the bread. Don’t go picking up wheat toast for this recipe, you need to go for the fancy stuff. I got a large loaf of sourdough bread and cut it thick. There is truly nothing like dunking bread into perfectly cooked yolks in a delicious tomato sauce. Something about it is so rich and satisfying that I can’t stop making this recipe.
This recipe is perfect to serve if you want to impress some guests, or simply want to treat yourself to some brunch in bed. Now let’s make it!
You will need:
- olive oil
- 1/2 onion
- 2-3 tomatoes chopped
- 2 eggs
- 2 slices of bread
Cook the tomatoes in a some olive oil in a pan on medium heat. Use 1/4 onion grated and 1/4 chopped. Using the grated onion helps to have onion flavor without having too many chunky onion pieces. Cook until ingredients are soft and tender (about 6-8 minutes). Top with over easy eggs. Serve with large slices of toast. Enjoy!
